I’m a pretty decent cook, but when it comes to cookies, I have to pass the torch to my daughter, Ashley. For some reason, I’ve always had issues making cookies – but it doesn’t keep me from trying. When my husband asked for some oatmeal coconut cookies, I dug through some recipes online and found this one that was really simple, Coconut Lover’s Oatmeal Cookies by Barefeet in the Kitchen. I changed it up a tiny bit (maybe that’s my problem) by using half of the oatmeal as steel cut.
To my surprise, these tasted fantastic! (Too good to be true, they stuck to the pan-next time, parchment paper, parchment paper, parchment paper!) A couple held together relatively well and the rest, they became finger food, which also migrated over on top of my yogurt. Talk about satisfying!!! If you’ve gone gluten free and miss granola, here’s a replacement!
So the silver lining to oatmeal coconut cookies sticking to the pan is discovering that they make a great replacement for granola. The bad part is, it was after I ate all the “granola” and yogurt before I thought, man I should have taken a picture of that!
